A very useful book It s a great resource in terms of Japanese ingredients and basic cooking skills in particular, but I ve also used a lot of the recipes, and they are excellent The recipe section isn t as long or as comprehensive as the reference section about Japanese ingredients, but overall a very useful and handy reference guide as well as a cookbook, especially if you re just starting out learning about Japanese cooking.

what i particularly like about this book is that the first half is devoted to a thorough, illustrated explanation of the traditions and ingredients that might otherwise be unfamiliar to western cooks and thereby demystifies japanese cuisine.

This one was a gift from my mother so I m biased toward it to start with but again, this is a cook book that is than just recipes It gives explanations of what type of implements to use and discussion of ingredients and their substitutes.
